I’ve been in kitchens since I was 15 years old, but pursuing it professionally for more then 10 years. I’ve progressed from apprentice to head chef, and moved from the countryside to cities. I have worked and staged my way through hatted restaurants around the world which has led me to consult on menu’s for world class bars and restaurants, catered weddings, held sold out pop ups and takeovers in Sydney, Melbourne and New Zealand.
More recently I jumped on to head chef the 150 seater Emerald Room Restaurant in Darlinghurst where I also launched the intimate culinary experience - The Chefs Table. A 5 seater 6 course (plus an arrival chefs cocktail) vegan degustation that explored wild foraged and native ingredients while playing homage to local artists and ceramicists around NSW.
In October 2024, I moved on from the Emerald Room to pursue restaurant management, offer my experience with hospitality consultancy and explore the world of food media.
In April 2025 I jumped on to host the ‘An Told’ podcast that explores the world of grit and determination within hospitality. You can listen to An Told on Spotify and Youtube.
